Whether you’re looking for an organic dessert for tonight’s tea, or hosting a fabulous dinner party, our delicious meringues will save you time and effort, and make it a meal to remember. What are they made of? We use our own organic egg whites and raw organic cane sugar with a touch of lemon. Using organic cane sugar reduces the sickly sweetness of refined sugar and gives the meringues an attractive ivory colour. We’ve reduced the sugar content and eaten on their own they have no fat, one meringue is equivalent to less than 2 teaspoons of sugar. However it has to be said they’re the perfect compliment to fresh fruit and a dollop of gorgeous organic cream or icecream. Click here to find our stockists.
Why? – a brief history….
Concerned with the number of eggs we could not sell because of mis-shapes and cracks we started to look into what we could make with them. After making some enquiries and doing some market research, meringues seemed to be the most popular request - particularly meringues made with fresh egg whites rather than from powdered egg whites. Hence started the journey into meringue making....
The team at the Riverford shops were more than keen to stock meringues made from fresh ingredients and actively encouraged us to clear the Environmental Health hurdles and have a go. In the Spring of 2007 we started production in our kitchen at home and managed to satisfy the local EHO that we could keep raw and cooked eggs apart. Despite the appalling weather that Summer, sales were good and we achieved Organic status in September.
As demand grew we moved production to Exeter where we could rent kitchen space. It wasn't until this March (2010) we invested in our own ovens and moved production back to Ashburton. The meringues now share the same space as our mayonnaise (though not made at the same time!!!)
Where can I buy them? We sell the meringues in packs of six small 'dollops' of shells (approx 5 cm each) or as individual pavlovas (12 - 14 cm diameter - mainly for restaurants). We wholesale the meringues and supply shops for retail customers as well as catering (restaurants and wedding/ special event catering). We also do mail order for caterers who wish to do Eton Mess puddings.

FRESH ORGANIC MAYONNAISE: Introducing you to our Mayonnaise! It was launched in June 2009 we have had We make the mayonnaise ourselves in Ashburton using the finest ingredients we can find. We use our own eggs and egg yolks (pasteurised) and local Devonshire cider vinegar (also pasteurised). We source our sunflower oil from Southern Europe, the sugar from Brazil (we also use this sugar in our meringues), the lemon juice from Italy, the pepper from Sri Lanka and the Mustard Powder from Canada.
As of Summer 2011, we have launched our new Garlic Mayonnaise after testing at food festivals and markets. It has been a great success and we intend to keep selling this delicious new product to our customers.

Everything is made by hand and we rely on our ingredients to stabilise the mayonnaise so we haven't had to rely on any extra additives or preservatives. The final product is not pasteurised - which means we have to take extra care in our production to make sure the mayonnaise is absolutely clean when it is put into jars. We believe, by not pasteurising, the mayonnaise has a lighter texture and the flavour is not compromised. For those of you who have bought it, I hope you enjoy it.
