It's been a long time since I've sat down to write an update on what we've been up to. Main excuse is we've been too busy getting on with stuff, and neglecting the website which is a shame as it's been a useful tool over the last year for customers old and new to find out more about us, the hens and the products. What are they made of?meringue_web

We use our own fresh organic egg whites and raw organic cane sugar.  Using organic cane sugar reduces the sickly sweetness of refined sugar and gives the meringues an attractive ivory colour. We’ve reduced the sugar contet and eaten on their own they have no fat and one meringue is equivalent to less than 2 teaspoons of sugar.  However it has to be said they’re the perfect compliment to fresh fruit and a dollop of gorgeous organic cream or icecream.  Click here to find our stockists.

Why? – a brief history….

Concerned with the number of eggs we could not sell because of mis shapes and cracks we started to look into what we could make with them.  After making some enquiries and doing some market research, meringues seemed to be the most popular request - particularly meringues made with fresh egg whites rather than from powdered egg whites.  Hence started the journey into meringue making.... 

 

baking_meringuesThe team at the Riverford shops were more than keen to stock meringues made from fresh ingredients and actively encouraged us to clear the Environmental Health hurdles and have a go. In the Spring of 2007 we started production in our kitchen at home and managed to satisfy the local EHO that we could keep raw and cooked eggs apart. Despite the appalling weather that Summer, sales were good and we achieved Organic status in September. Since then, we have moved our production to an organically registered kitchen near Exeter, but still make them ourselves using our own eggs and organic cane sugar.
